Before Keto Bread Eating Memories

I remember once about a time not too long ago when I embarked on my low-carb diet ventures and came to the conclusion that I had to give up bread to be successful on my journey, of I tried to find a low-carbohydrate alternative but always came up short in the trying them stage.

A few weeks in and things were going pretty well when I seen one of my brothers eating an old school PB&J sandwich and it hit me instantly I wanted in but controlled me craving, attempting to stay true to my diet.

The very next morning I got on the internet and searches for breads that can be eaten on a low-carbohydrate diet take doesn't fall apart (very bad search keywords but I was a little frustrated), low and behold I found a Cookbook named Keto Breads and was immediately invested in trying them.


(Sorry about that tiny peek inside my brain) I am here to let everyone know what I experienced while trying (currently eating) that delicious bread made out of Almond Flour.

Most low-carb diets out on the market nowadays so call "bread" always seemed to be very eggy in taste and the texture of the bread was constantly inconsistent and fell apart at every turn or accidentally shoulder bump.

That's why I was so thrilled to find Keto Bread at first i was skeptical due to past experiences but I had to give it a try, even if I wasn't what I wanted at least I know I gave it a shot.

But it was a success no bread falling all over place, nice consistency Yes!!!!!! 


From My Experience Here Are A Few Tips On Baking

First thing first the eggs you are going to use for the recipe that will be below should always be at room temperature, I know I know if you're pressed on time just put them in a bowl and run some hot water over them for about 2-3 minutes.

This will greatly reduce the eggy flavor low-carb diet breads have. Next you will need get your butter and coconut oil to room temperature if they're are not here's a simple fix just cut the butter up and place it in a saucepan on low and as soon as it starts melting take it off the eye and let it cool.

Mainly because your adding it to eggs and you dont want them to start cooking, ok now you add you coconut oil to the butter and depending on your tastesbud you can use the refined oil if you don't like the taste of coconut once it's all mixed start pouring in you eggs steadily while mix everything toward in the pan on low.

So you may be wondering which butter do I use that's mainly up to you but I would advise grass fed butter. On to the step now it the dry goods time shine you'll have to get a bowl and mix your almond flour with the xanthan gum baking powder and salt.

Stir generously until all ingredients are combined then Slowly pour your egg mix into the bowl until it's nice and thick. My favorite part it's time for our creation to hit the oven, turn on fan force oven or turn your oven fan on if you have that option to 180°C or 355°F.

Wait until oven is completely hot and at temp, if you have a convection oven, drop the temperature by 5 C (20 F). If you are using a glass loaf pan, also reduce the temperature. (Glass retains heat longer) Please remember to use baking paper or whatever you prefer to bake with especially if you're not using a silicone baking try.

Smooth out the top of the bread with a spatula or the back of spoon, this will help the bread stay consistent while baking. Be prepared I often go 10 minutes less then recipe recommended time just to be safe I can always finish baking something but once it burns...... can't do much with it.

Once small cracks appear on the top and the bread turns a golden brown colour, test with a toothpick or bamboo skewer right into the centre of the bread.  If it comes out clean, the bread is done. If not, you can bake an extra 10 minutes before checking it again.

Simple Cooling Method

Upon taking the bread out have a designate area to have a cooling rack if you may not have one cool just use something the will allow the bread to cool on all sides evenly which will in turn further reduce the eggy taste.

(I like my eggs just not my bread tasting Just like it) and the why on a cooling rack if you let the bread sit on a normal bench top or chopping board, the bottom section of the bread will turn a different color.

Ingredients

7 Large Eggs (50g / 1.7 oz each)

3.5 oz Butter melted (100 g / 1/2 cup)

1 oz Coconut Oil (30 g / 2 Tbsp)

7 oz Almond Flour (200 g / 2 Cups)

1 teaspoon baking powder (5g / 0.2 oz)

1/2 teaspoon xanthan gum (2g)

1/2 teaspoon Salt (2g)

Instructions

Preheat the oven to 180 C (355 F).

Put the eggs in a bowl and beat on high for 1 to 2 minutes.

Add the melted butter and coconut oil, and beat until smooth.

Add the almond flour, baking powder, xanthan gum and salt, and beat until combined and thick.

Scrape into an 8-inch X 4-inch (20 cm x 10 cm) loaf pan lined with baking paper.

Bake for 45 minutes or until a skewer comes out of the middle clean.

Slice into 16 thin slices and store in an airtight container in the fridge for up to 7 days or up to 1 month in the freezer.

Are These Breads Dairy Free?
Yes! Most of the recipes in Keto Breads are dairy free or can be made dairy free by substituting coconut oil (or any fat that is solid at room temperature) in place of butter. However, there are five recipes in the book that call for cheddar, mozzarella, cream cheese or sour cream. These ingredients serve an important purpose in the recipe and cannot be left out, while achieving the same results. However, we do include recipes for dairy-free Paleo Cream “Cheese” and Sour Cream if you’d like to substitute these ingredients with non-dairy options.

Are These Breads Egg Free?
Eggs provide binding and structure to baked goods and the recipes in Keto Breads do contain eggs. However, the introduction to the book provides a section on replacing eggs, with formulas, ingredients and instructions to create egg substitutes. The results are not exactly the same as the breads when made with eggs. However, the end results are quite similar and still very tasty!

How Many Carbs Are In These Breads?
These breads were specifically formulated to be VERY low in carbohydrates. We use low-glycemic ingredients. And we provide the nutritional analysis for every recipe, so you always know exactly what you’re consuming. These recipes contain no more than 5g net carbohydrates. And most are in the range of 1g to 3g net carbs per serving (Net carbs are calculated as carbohydrates minus fiber).To put this into perspective, a whole apple has about 21g net carbs.
